An oak cabinet kitchen remodel story in Rock Falls, Illinois with design, product, and complete project management remodel services by Village Home Stores.

Welcome a the newly remodeled kitchen in a Rock Falls, Illinois home. This kitchen renovation was part of a multi-room project management remodel handled start to finish by the kitchen and bath remodel experts at Village Home Stores. Village remodeled multiple rooms at the back end of this home including a back entrance sunroom/porch, a new bathroom, a hallway space converted into a laundry area, and the kitchen we are sharing here. We also used this opportunity to widen other doorways and update some doors and other flooring hardware and trim in the home.

The new kitchen has been fitted with custom Amish-built red oak cabinets and a stunning combination of green wall tiles. The U shape layout keeps the kitchen sink at the center with a cooking zone wall and refrigerator and small appliance space on the opposite legs. A deep double-well stainless sink at the center of the U shape design sits right below the new wider kitchen window. This deep sink means that it can wash large items… but it also means things are out of sight when they are in the sink as you pass by the kitchen. A suite of stainless-steel Whirlpool appliances from Village Home Stores completes the look.

Take a Short Video Tour of The Finished Kitchen

Pictures can’t show you around a space as good as video, so we made you a tour to watch. If you want to have a closer look around, just press play below to see the finished space and see that stunning wall tile in video when the light hits it.

<iframe class="dsg-block-1-youtube-video" title=“Kitchen Remodel Tour with Red Oak Inset Cabinets and Green Tile” src="https://www.youtube.com/embed/JtQjCaqu7Co" frameborder="0" allow="autoplay; encrypted-media" allowfullscreen>

Before and After Remodel

The home remodeling process can take time and a lot of patience when everything is handled correctly. Never trust a contractor who claims they can have your kitchen transformed in a weekend. An scheduling materials and crews in sequence is an important element to our process. But during that process is when you can address other areas of your home that have small projects needing attention. Ask your remodel project manager at Village during your contractor meeting if you are wanting electricians, plumbers, carpenters, or other crews to also knock something off other home project lists while they are working on your kitchen or bath remodel. Are we scheduling electricians for your remodel? Then maybe now is the time to fix a switch that needs it or install a new light fixture in the dining room or front entry. This way we can include the added line items to your schedule and your estimates and you can avoid paying trip charges or struggling to find crews willing to tackle small projects later.

As we shared in the video tour above, the kitchen remodel included reconfiguring the footprint of available kitchen space. The finished result was enough space for a u-shaped kitchen design that kept the sink below the kitchen window. As you can see above, we installed a new wider window during the renovation. Now there is a proper kitchen footprint and countertops and wall tile that spans the entire room. We moved a doorway in the left corner so now the cabinets and counter can return to the left side and build out a full cooking zone wall.

Emerald Green Wall Tile for Backsplash and Accent Above Range

The kitchen wall tile is one of the key elements to this complete design. I am sure you have already noticed this vibrant green statement that is made with color, sheen, shape, and texture. The cooking zone wall showcases these vibrant tones and textures best.

The wall tile is truly one of the key elements of this finished design. 4” x 4” glossy emerald green wall tiles are installed in a grid pattern. Above the range is an accent area of a diamond mosaic tile. The texture of this tile creates a waffled effect when the light hits it. This combination of textures and variations of color is stunning and the pairing with warm oak is a classic choice. We also included floating oak display shelving on the cooking wall in the same wood and finish.

Red Oak Inset Shaker Style Cabinet

The new kitchen has been installed with custom Amish-built Red Oak Cabinetry in a custom stain to match existing built in cabinets nearby. The cabinets are an inset style meaning the doors and drawer fronts close flush with the face frame of the cabinet boxes. This is a style perfect for historical properties and pairs well with the existing woodwork and antiques throughout the home. We included concealed hinges and matching faceted wood knob hardware to compliment that nearby dining room hutch original to the home.

A great kitchen design should never seem time-stamped, instead it should seem like it has been in place all along. Complimenting the home. Here we were able to include much-needed updates and better storage options in a kitchen design that does compliment the home and the collectible décor that our client curates. There is now plenty of new wall cabinet storage all the way to the ceiling and a shelf for a countertop microwave to be set above the counter leaving more room for other small appliances below.

Blind Corner Swingout Base Cabinet

In the corner to the right of the sink, we needed to allow space to add a dishwasher in the new design. This left us without enough space allowance for a standard “Lazy Susan” base cabinet. We did have enough space to include a “blind corner cabinet” And this one includes a game-changing storage solution inside designed to help you access the full storage potential of that corner space. The shelves pull out and swingout to allow you to storge the same kinds of items that would be in a Susan. Giving these homeowners a dishwasher finally and keeping an excellent storage solution at the corner. Press play below to see it in action:

<iframe class="dsg-block-1-youtube-video" title=“Blind Corner Base Cabinet With Swingout Shelves” src="https://www.youtube.com/embed/_LM5nEZDoiI" frameborder="0" allow="autoplay; encrypted-media" allowfullscreen>

Red Oak Inset Kitchen Remodel in Rock Falls, Illinois

Tour a new home kitchen design with black painted and maple stained cabinets and a custom range hood with metal banding. Village Home Stores for Advance Homes of the Quad Cities.

Welcome to the open concept kitchen in a new Quad Cities home built in Bettendorf, Iowa featuring cabinetry, lighting and hardware from Village Home Stores for Advance Homes. This kitchen is found on the main level of the new construction home in a great room set up. The main kitchen design is an L-shape layout. There is a pantry at the corner, a statement range hood on the cooking wall, and a large kitchen island at the center.

Painted Black and Maple Wheat Kitchen Design

The design features two cabinet styles and finishes both from our Koch Classic Cabinetry line. The perimeter cabinetry is a painted black finish on Koch Classic’s Savanah shaker style door. The kitchen island is a slab style door named Liberty in a Maple wood with a Wheat stain applied. At the center of the kitchen is a large single-level kitchen island. The island includes storage accessible from all sides, the kitchen sink and dishwasher, and an overhang for counter height seating.

There is a contrast in the cabinet finishes as well as the Emtek handle hardware. This is the Select series in a knurled rectangle style with Matte Black pulls on the Maple Wheat-stained island and Satin Bronze on the painted Black perimeter cabinets.

There is a stylish and subtle statement made on the cooking wall of the kitchen design. We collaborated with two local makers to build a range hood cabinet and add metal banding to it. Dusty Smith built a box-style range hood and included two horizontal grooves in it. We then had a local metalworker at Southwick Machine and Design insert bands in a brassy gold finish into the grooves. Those two narrow bands catch the light so perfectly as you move throughout the great room. The look is stunning and just another example of how we can help your ideas and inspirations found online become a reality.

The other side of the kitchen L-shape is home to a microwave drawer and the refrigerator. Just a few steps away from the kitchen there is a dry bar area in matching cabinetry to the kitchen. This versatile space bridges the area between the front entry/hallway and the entrance to the kitchen.

Dry bars are a wonderful element to consider for your kitchen design because they can be so versatile. Having a designated beverage area apart from the kitchen can be so helpful to keep guests out of the way as a host works in the main kitchen. Any normal day this space can become your coffee bar area. When entertaining you can set the dry bar up as a beverage center, a gift station, or even a place to park handbags and phones while entertaining.

Take a Quick Video Tour of the Kitchen Design

Want to have a more detailed look around? Take a quick video tour by pressing play below:

<iframe class="dsg-block-1-youtube-video" title=“Black, Maple, and Brass Kitchen Design tour in Bettendorf, Iowa” src="https://www.youtube.com/embed/jdCnZBSXuKY" frameborder="0" allow="autoplay; encrypted-media" allowfullscreen>

What a gorgeous space and we are so proud that this home was part of the recent Quad Cities Builders and Remodelers Parade of Homes.

Corner Pantry False Front

Another detail we love is the hidden pantry entrance at the corner of the kitchen. Right where the cooking and refrigerator walls of cabinetry meet is a corner pantry entrance that opens to a walk-in space much larger than any pantry cabinet could offer.

We can order matching pantry fronts for your kitchen design, and we have seen customers hide away pantries, laundry rooms, and even speakeasy bars behind them. This concept can also be installed on a straight run of cabinetry; it is not specific to a corner installation.

Kitchen Island and Pendant Lighting

The finishes in this open concept kitchen design all balance out so well. Even though the main cabinetry is a bold black paint, the rest of the finishes placed within an open space keep things from feeling too heavy or crowded. Using a lighter finish on the cabinet island keeps the visual weight of the large size minimized and light quartz countertops keep things feeling open as well.

Above the island hangs a trio of orb pendant lights. The pendants are named Albers and they are from our Kichler Lighting line. We love the simple round white glass paired with an intricate chain design that keeps the lines of the style clean but still very interesting to look at.

The Champagne Bronze finishes on the pendant lights compliment to the cabinet hardware and custom range hood inserts perfectly. You can shop this pendant style and more online from our lighting catalog here. This kitchen turned out incredible and we are so thankful for Advance Homes and all our builder partners in the Quad Cities who trust us with their cabinetry orders.

Black Cabinet Kitchen with Maple Wheat Island and Custom Banded Range Hood

Tour a rural Illinois kitchen remodel with black cabinetry, a mirrored backsplash, and hidden walk-in pantry area. Images and video tour included.

We love any chance we have to showcase our renovation stories because there is so much story to share about them. A transformed space that improves life at home is our goal every time. And every project is different from the next. This rural home in Rio, Illinois had a complete overhaul on the main living spaces. New flooring from the front door into multiple rooms plus wall removals to open the kitchen and living spaces into one cohesive space. Village Home Stores was honored to have the trust of these customers to manage the remodel from start to finish.

We helped design a new layout and gathered all the needed estimates from subcontractors before finalizing the remodel inclusion contracts and ordering products. Once materials began to arrive, the remodel process went into action with demo, removing walls, and scheduling all needed subcontractors. Our kitchen and bath project management team works with your designer to build out a project schedule that is customized to the needs each remodel we complete.

Black Cabinets for a Transitional Look

We know that the last kitchen feature we shared on the blog was also a painted black finish, but this example is another way to point to how versatile the finish can be. Black cabinets are a great option for those looking for a Transitional styled space without a white painted cabinet.

This new kitchen looks amazing with a mix of warm walnut flooring, marble and mirror tile, marble-like countertops, and geometric details. The cabinetry is from out Koch Classic line in the Savannah Shaker door style and a Painted black finish. The flooring is from our COREtec luxury vinyl plank line and this is the Tyro Walnut finish.

Take a Tour with the Kitchen Designer

We can’t only share a few pictures of a kitchen you know that we had to also film this remodel story for you. We had the designer Rachel give us a tour of the finished space. Press play below to have a look around and hear about some of the wall removal and rearranging that we did.

A beautiful space right? It has already been used for large family gatherings and once the rest of the new furniture arrives, the new open concept layout will become fully realized in this home. From the floors to the ceiling, and everything in between, we worked on it all. A complete overhaul of the space to give these homeowners a whole new home inside.

Hidden Pantry and Coffee Station

It is no secret anymore that we love to include hidden pantries when we are able to. In remodels they allow us to maximize the usable space available. Wouldn’t you rather have a pantry like this instead of a cabinet just a few feet deep? Often we can borrow depth for the pantry space from the rooms surrounding the kitchen. In this case, we were able to rework the layout to use existing closet space and reroute the access to this hidden pantry front.

It is not just one of our favorite elements to the kitchen. We have heard from these clients that the favorite detail of the new kitchen for their grandkids is in fact this hidden pantry. Imagine having a place to sneak away to play AND it has snacks!?! Of course it’s their favorite! See this pantry in action here on our YouTube channel. And see the full album of photos from this finished kitchen here on our Houzz page.

The wall of cabinetry installed on the Dining Room side of the new design includes a concealed coffee station. An appliance garage cabinet has been included in the space between the wall cabinets and the countertop. We have added an outlet inside of the floor-less cabinet so that the coffee pot can stay plugged in and only exposed when in use. When the doors are closed, this wall gives the look of a decorative hutch area and includes an “X” design in some of the doors with glass inserts. The glass door details are mirrored on the wall opposite it with the hidden pantry. Speaking of mirrors, check out that stunning mirror and marble mosaic tile on the wall! This is a Lavaliere Intertwining Arabesque mosaic tile from our Daltile line in a Carrara White with Black Mirror glass inserts. This tile selection elevates the finished kitchen to a whole new level. We love how it helps bounce light without having a disco ball effect in the room.

The Cooking and Clean Up Zones of the Kitchen

The cooking and cleaning zones of the new kitchen design are found right at the center of the space. The cooking wall is home to the counter-depth refrigerator surrounded by panels and a cabinet above. On the same wall a freestanding double oven KitchenAid range has generous countertop work surface on each side. The microwave hood installed above is one of our new flush-mount microhood options available from KitchenAid. This model allows the microwave to sit back flush with the cabinet doors instead of projecting out towards the user at the cooktop.

You will notice that on this center wall of the kitchen we carried the Vicostone Graylac quartz countertops up as a full-height backslash. We also want to point out the hardware in the new kitchen. We went with a black on black effect but the reason why it still works is there is a texture difference from the angles on the Wheeler series knobs making them easy to spot and grab onto. These Matte Black knobs are from our Jeffrey Alexander hardware line and come in a variety of finish options.

At the center of the new kitchen design is that large kitchen island. The island includes a single-level countertop with an overhang along the back and wainscot paneling on the side that faces the Living Room. On the interior side of the island is the kitchen sink and dishwasher. The soft curve of the countertop overhang can accommodate a long row of counter-height stools.

Rural Remodel with Walls Removed and Hidden Pantry Added

Get an early sneak peek at Maytag’s new Commercial for Residential Laundry launch. Learn why they are calling it their most dependable washer and dryer pair ever built.

For those who shop with us or call for service and say “they really don’t make them like they used to” this is Maytag’s earnest attempt to truly take steps to build laundry like it used to be built… and dare I say better? But readers, the steps they are taking are not steps backwards and that’s a good thing.

This new Maytag Commercial for Residential laundry launch is proof that the engineering team is taking steps forward with respect to the way things used to be. Including only what is needed for the very best performance from your investment. Literally no bells and whistles, just the good stuff. And these machines have no interest in connecting with your WiFi. I just got back from our BrandSource buy fair where we were able to see, train, and place our order early for these models.

We will share more details when we get ours on the floor, but I must give you an early sneak peek with what we know so far. The reason I say “I” here sometimes and not a more generic “we” is I want you to know this is written by a real person (Hi, Elizabeth writes these if you didn’t know that). Not AI, not someone who works at Maytag, but a real person in your community who is excited about this launch and wants to let you know what to expect.

It is no secret that we are in the business of selling and servicing appliances at Village Home Stores. But trust us, we don’t love it when we see you just a handful of years after a purchase in need of replacement already. We want you to replace your home appliances because you are ready for an upgrade, not because they stopped working. This is why we heavily curate our product lineups in every department at Village.

Maytag’s New Commercial Laundry and DuraCore System

Village Home Stores wants to send and install quality products in your home so that you can fully enjoy your time spent at home. So, when we hear a product launch use phrases like “Buy it for life” or “Engineered to last 30 years” our ears perk up quite a bit for our customers. This new launch is something I am so excited to offer our customers.

This new design includes what they are calling a DuraCore™ System. It is a base-mount suspension system with a skate ring that absorbs force in the spin cycle. There is a Direct Drive motor set on a base designed for a better center of gravity when in use.

Commercial-Grade Parts and Fully Front-Serviceable

The DuraCore™ System is sturdy and dependable. This is because it is assembled using durable commercial-grade parts. We watched the unit be taken apart right in front of us and they passed around some of the parts. Let’s just say rubber and plastics are being replaced with sturdy metal pieces and units that you get to have at home are built to take the abuse a laundromat would normally see. This new design and commercial-for-residential approach resulted in reducing the amount of small, high-maintenance parts by 50%. As in half. And what parts are left are commercial grade components.

This new rebuild and the elimination of 50% of parts inside of the unit allow Maytag to say it and mean it when they claim, “engineered to last 30 years or 12,000 uses”. Plus, they have piled on two layers of warranty coverage which is not typical in this industry anymore. The Maytag Commercial units come with full parts and labor 5 year warranty plus 10 years of warranty on key components of the machines. This translates to the motor and wash basket on the washer and the drum and the motor on the dryer.

If you do need appliance service, or just pump or valve maintenance, our service techs are ready to help. The image above shows a feature that we are probably more excited about than you. The units are fully front-serviceable. What the heck does that mean? It means that our techs can access the entire system inside of your washer or dryer without moving it out into the room to disassemble. Not every laundry room is a spacious laundry lounge area. Many times, it is a tight space we are working in. So, if we did ever need to service the units for you, it will be quicker and easier to get you back up and running.

In case you haven’t met me in person, yes that is my honest, excited feedback in the voiceover. We were so thrilled to see the feature lineup on this launch. Reader, please know that a room full of appliance dealers and servicers can be the hardest crowd to please. Nobody asks harder questions or expects more from a new launch than an independent appliance dealer who also runs a service department. This room was buzzing with excitement, and everyone is very pleased with what Maytag is sending to us out of the Ohio factories.

Maytag Commercial 8305 Washer with Power Wash

We know that control over your water level in a wash is important to you. We hear our customers every day ask about a deeper fill and the option to add items after the wash starts without a lid locking on them. The product trainers tried to casually drop “no lid lock” in our training and the room full of dealers actually erupted in applause and shouts of “thank you”. I may have even heard an “Amen” from the back at one point.

The MTW8305 has 4 water levels including a deep water option and like we mentioned, no lid lock. There is also a Quick Wash cycle (30 minutes), and for our customers on well water or with very hard water in their homes, the inlet valves used in this commercial assembly are also commercial-grade valves ready to work better for your investment.

And yes, Maytag still includes a Power Wash cycle (45 minutes) on this unit. You didn’t think that they would launch a new washer literally built for your toughest loads and leave out the one-step cycle option that will get you the best cleaning did you? So, for our active families, farmers, mechanics, pet owners, and parents of messy tiny humans or age-in-place humans, Power Wash is ready for you. Power wash adds extra time, agitation, and water to the wash for the best cleaning out there. That gives you the best cleaning available in the most dependable laundry pair offered.

Maytag Commercial-Grade Dryer

These units have a simple, “Heritage” design and come in White and Midnight Steel. The controls are so straight-forward, and this machine has no interest in connecting to your WiFi.

And talk about another welcome return to the basics, many of our customers will be happy to learn that this dryer doesn’t sing a cute little song to you when it is done. Instead, there is a simple buzzer sound when the dryer is finished. This is also easy to turn off and on with a single switch. You will find that another Maytag favorite has been included in an optional add “Pets” cycle. This cycle is designed to help remove pet (and human) hair during the wash and dry cycles.

Shop Local and Shop First at Village Home Stores

More great news is we will always offer this laundry pair at a competitive price to our customers with the options for warehouse pickup or delivery and installation by our expert staff. We know that a majority of our laundry purchases happen because your current laundry machines stop working. That means, you may not be prepared to invest in this pair at that moment in time. Please know that we offer 0% financing to our customers that qualify. That way you can buy now and pay over time to help get you the dependable home appliances you need now.

You can trust you will get the best price and the best service when you purchase from our small business. Plus, our small business will have the privilege to show these new washers and dryers FIRST on our showroom floor because of our exclusive relationship with the Whirlpool Corp. brand lineup. We will be sure to make a big announcement when we receive our floor models (expected end of this year) on our social channels. Be sure to follow us on Facebook, Instagram, TikTok, YouTube, and LinkedIn to be the first to know and come see them in person. I wish I had taken more pictures and notes in this training but trust me, we will have a full detailed video tour of the models once we get them on the floor. In the meantime, you can always come chat with us in store at 105 S State in Downtown Geneseo, Illinois or online at villagehomestores.com.

First Looks at Maytag’s New Commercial for Residential Laundry

Recipes from our annual staff soup cookoff including the winning creamy mushroom sausage soup recipe.

Mother Nature finally looked at a calendar, and it's finally feeling like fall in the Midwest folks. What better way to welcome the “-ber” months than with a proper kickoff to soup season! We just hosted our annual staff soup cookoff to celebrate autumn, and here is our yearly post with ALL of the recipes from that delicious day at Village Home Stores.

The Village Soup Cookoff day is undefeated as the best smelling day our showroom sees all year long. This year eight staff members participated with an entry, and most of our staff were able to participate in the voting for this year's winner. One vote is allowed from each Village staff member, and the tasting/voting period takes quite a bit because that's a lot of soups to test and re-test (and return again just to make sure).

What's there to win? Well, bragging rights of course! Plus, the winner of the Village soup cookoff gets their name added among all past winners on a plaque in the Village breakroom we call the “Golden Ladle.” We also point to their winning recipe first in this recipe recap, and the winner is...

2026 Soup Cookoff Winner Is Angela!

This year Angela won with her creamy mushroom sausage soup and homemade croutons. What a well-deserved win too! She made this soup completely from scratch (even the croutons and mushroom stock), and you can too! Seriously, it is easier than you think. Here is her recipe plus the other seven entries for our 2026 staff soup cookoff.

Angela's Award-Winning Creamy Mushroom Sausage Soup

Ingredients:

16 oz of fresh mushrooms, washed and sliced thin (reserve stems for stock)

4 cloves garlic, fine chopped or sliced thin

1-2 shallots, minced

3 Tbsp butter

1 Tbsp olive oil

¼ cup flour

3-4 cups mushroom stock (see directions)

½ cup white wine

½ to 1 cup heavy cream

Salt and pepper to taste

¾ tube cooked Italian sausage

Croutons (garnish)

Optional: serve topped with croutons (see below for homemade crouton recipe) and Italian sausage.

Directions:

Prepare the stock: To a large stockpot add 3-4 cups water (about 2/3 the size of you would like your batch of soup to be). To the water add the clean mushroom stems as you prep your mushrooms. Add some chopped carrots, a bit of onion and some sort of herb available to you (thyme works great). Salt the broth and simmer while you prepare the rest of your items. Strain before or as you are adding to your soup.

Slice your mushrooms thin, mince your shallot, and finely chop or slice your garlic. Prep your croutons and Italian sausage (optional) and set aside. In your large soup pot heat butter and oil over medium heat. Add mushrooms and shallots and sauté for 10 minutes. Add garlic and sauté for another 1-2 minutes. Add your flour and stir everything to coat well. Add your wine slowly while stirring to pan to deglaze. Add your mushroom stock. Stir and let cook until bottom of pan is fully deglazed. Add cream, fresh thyme, salt and pepper to taste. Reduce heat to a low simmer and simmer until service.

Garlic and Pepper Torn Homemade Croutons:

Ingredients:

½ loaf of sourdough bread

½ cup olive oil

1 clove garlic, minced

Salt to taste

Ground pepper to taste

Directions:

Tear apart sourdough into small rustic chunks. Add them all to a large bowl and drizzle over your olive oil and garlic. Season thoroughly with salt and fresh ground black pepper. Massage and toss until bread is well coated. Bake on a lined baking sheet at 400 for 15 minutes.

Rachele's Creamy Italian Sausage Gnocchi Soup

Ingredients:

16 ounces Italian sausage

2 sticks celery, chopped finely

1 medium onion, chopped finely

4 cloves garlic, minced

2 tablespoons flour

4 cups chicken broth

1 (28 ounce) can crushed tomatoes

1/2 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon dried oregano

1 package uncooked potato gnocchi

1 cup heavy/whipping cream

2 cups fresh baby spinach

Salt and pepper to taste

Directions:

Cook your sausage in a Dutch oven/large soup pot. Sauté over medium-high heat, stirring occasionally, until the sausage is browned. Remove the sausage from the pot and transfer it to a paper towel lined plate. Leave excess fat in pan. Add the onion and celery and garlic to the pan and cook for about 5 minutes. Add the flour and stir to coat for about one minute. Slowly add chicken broth and stir until the flour has been incorporated. Add the canned tomatoes, oregano, and crushed red pepper flakes to the pot. Add cooked sausage back into pot. Increase the heat to high and bring the soup to a gentle boil. Once it's boiling, add the gnocchi and cream. Reduce the heat to a simmer. Cook for 10 minutes, stirring occasionally to ensure the gnocchi isn't sticking to the bottom of the pot. If needed, add another splash of chicken broth and/or cream to thin the soup out a bit more. Stir in the spinach and season with salt & pepper to taste.

Optional: serve topped with parmesan cheese.

Monica's Easy Gluten Free Crockpot Baked Potato Soup

Ingredients:

1 can (gluten free) cream of chicken soup

8 ounce package shredded cheddar cheese

4.5 ounce bacon bits

32 ounce package frozen cubed potatoes

8 oz cream cheese

Salt and pepper to taste

Directions:

In a crock pot, mix chicken broth and cream of chicken soup. Add potatoes, half cheddar cheese, and bacon bits. Cook on low for 8 hours or high for 4 hours. With an hour left, cut cream cheese into small pieces and add to soup. Stir occasionally in the last hour to chop up the cream cheese. 10 minutes before serving, add the rest of the cheddar cheese and salt and pepper to taste.

Elizabeth's Crockpot Thai Coconut Curry Chicken Noodle Soup

Ingredients:

2 cans of Campbell's Thai curry sauce (yellow curry and coconut)

1 can light coconut milk

3-4 cups water (use empty cans to measure)

½ cup rough chopped carrots

½ cup rough chopped celery

1 shallot, fine chopped

3 cloves garlic, pressed or minced

2 Tbsp butter

Salt + pepper (to taste)

2 cups dry pasta noodles of your choice

2 cups shredded chicken breast (I used frozen roasted shredded chicken)

Directions:

Wash and prepare your veggies. Sauté your carrots, celery, shallot, and garlic in butter until cooked and fragrant. Salt and pepper to taste. Add to crockpot and add cans of Thai curry sauce, coconut milk, and water. Used each empty can to fill with water and measure. Add frozen or fresh shredded roasted chicken breast. Stir and salt and pepper to taste. Cook on low all day. Add dry noodles 45 minutes before serving.

Optional: garnish with fresh Thai basil, cilantro, or parsley. Serve with roti, naan or other flatbread for dipping.

Alexis' Marry Me Chicken Soup

Ingredients:

1 tablespoon olive oil

½ medium yellow onion, finely diced

4 cloves garlic, minced

½ cup sun-dried tomatoes in olive oil, drained and chopped

2 tablespoons tomato paste

7 cups of chicken broth

Salt and pepper to taste

2 teaspoons Italian seasoning

½ teaspoon crushed red pepper

12 oz pasta

2 cups shredded and cooked chicken

3 cups fresh baby spinach, chopped

¾ cup half & half or heavy cream

1 4 oz. package of Boursin cheese

½ cup freshly grated Parmesan cheese, (reserve some for topping)

Directions:

Heat the olive oil in a Dutch oven or soup pot over medium heat, then add the onions and garlic. Cook until the onion softens and the mixture becomes fragrant (about 3-4 minutes). Stir in the sun-dried tomatoes and tomato paste. Cook for a minute or two so the flavors deepen and the tomato paste caramelizes slightly. Pour in the chicken broth and season with salt, pepper, Italian seasoning, and crushed red pepper. Allow the soup to come to a gentle boil so the flavors meld. Add the pasta directly into the boiling broth and cook until just al dente (pasta will continue to cook until service). Reduce the heat, then add the shredded chicken, chopped spinach, half & half, Boursin cheese, and a portion of the Parmesan. Stir until the cheeses melt and the soup becomes creamy.

Optional: top with reserved Parmesan cheese.

Natasha's Loaded Baked Potato Soup

Whisk in flour to coat and cook for 1-2 minutes. Whisk in milk, half and half and slowly add chicken stock. Bring pot to a light simmer for about 5-7 minutes until it has thickened a bit. Stir in cheese, bacon, and sour cream. Remove from heat and add potatoes to the pot.

Add butter and sauté the onion until soft and transparent. Add garlic and stir to combine. Add flour and stir 1-2 minutes to cook and coat.
